Apercebi-me que ainda não tinha posto uma receita de pães curtos clássicos! Esta receita torna os pães curtos perfeitamente estaladiços e perfumados. Açúcar de cana, baunilha, manteiga fresca, uma receita simples mas essencial em qualquer livro de cozinha. Como você já deve saber , eu sou uma noz de bolo curto! E estes têm o sabor de infância que tanto amo! Esta é uma boa maneira de ensinar as crianças a cozinhar. Foi com isso que comecei a cozinhar quando era criança!
Receita de biscoitos curtos:
-500g de farinha
-240g de açúcar de cana fino
-150g de manteiga mole
-110g de manteiga semi-salgada
-1/2 feijão de baunilha
-1 ovo + 1 gema misturado, pesado e depois dividido por dois pesos (ver abaixo)
Colocar a farinha na tigela da batedeira.
Este é o único açúcar de cana “fino” que consegui encontrar. Porque o açúcar mascavado tem um tamanho de grão demasiado grande.
Acrescentar o açúcar à farinha.
Retirar a vanilina da metade do feijão baunilha e adicioná-la à tigela. Guarde a cápsula para outra receita!
Misturar açúcar, farinha e vanilina.
Cortar a manteiga fria em pedaços.
Adicionar a manteiga e mexer para misturar. Quando a manteiga está completamente misturada, parece mesmo areia.
Colocar o ovo e a gema inteiros numa tigela.
Misturar bem com um garfo e pesar a mistura. Se o peso total pesar 70g, tomar apenas metade, ou seja 35g, para adicionar à mistura de “areia”.
Acrescentar metade dos ovos batidos à mistura de areia.
Misturar sem “picar”, ou seja, sem insistir na massa, que pode tornar-se demasiado dura depois de cozinhada. Assim que tudo estiver homogéneo, parar de misturar.
Estender a massa sobre papel vegetal a uma espessura de 6mm. Depois recortar formas com um cortador de biscoitos. Aqui utilizo um molde canelé.
Colocar o pão curto sobre um tabuleiro forrado com papel vegetal. Deixar os pães curtos no frigorífico durante uma hora antes de os cozer.
Aquecer o forno a 180°C. Depois cozinhar durante 15-20 minutos.
