أدركت أنني لم أضع وصفة كعكة الغريبة الكلاسيكية بعد! إليك شيء تم إنجازه بهذه الوصفة التي تقدم كعكة الغريبة المقرمشة والعطرة تمامًا. قصب السكر والفانيليا والزبدة الطازجة الجيدة ، وصفة بسيطة للغاية ولكنها ضرورية في أي كتاب طبخ. كما أنتم قد تعلم الآن ، أنا مجنون بشأن كعكة الغريبة! وهذه لها رائحة الطفولة التي أحبها كثيرًا! إنها طريقة رائعة لتعليم الأطفال الطبخ. هذا ما بدأت به في الطهي عندما كنت صغيرًا جدًا!
وصفة الغريبة:
– 500 جرام طحين
-240 جم سكر قصب ناعم
-150 جرام زبدة غير مملحة
-110 جرام زبدة نصف مملحة
-1/2 قرن فانيليا
– 1 بيضة + صفار مخلوط ، وزنها ثم وزن مقسوم على اثنين (انظر أدناه)
نضع الدقيق في وعاء الخلاط.
هذا هو سكر القصب “الجيد” الوحيد الذي يمكن أن أجده. لأن السكر البني يحتوي على حبيبات كبيرة جدًا.
أضف السكر إلى الدقيق.
خذ الفانيلين من نصف قرن الفانيليا وأضفه إلى الخزان. احفظ الكبسولة لوصفة أخرى!
اخلطي السكر والدقيق والفانيلين.
نقطع الزبدة الباردة إلى قطع.
أضيفي الزبدة وقلبي لتغطي كل شيء. عندما يتم خلط الزبدة تمامًا ، يبدو الأمر برمته مثل الرمل.
ضعي البيضة الكاملة والصفار في وعاء.
تخلط جيدا بالشوكة ثم تزن هذا الخليط. إذا كان وزن الكل 70 جم ، خذ نصفه فقط ، لذا أضف 35 جم لإضافته إلى خليط “الرمل”.
أضف نصف البيض المخفوق إلى خليط “الرمل”.
تخلط بدون “تتبيل” ، أي بدون الإصرار على العجينة التي يمكن أن تصبح قاسية للغاية بعد الطهي. بمجرد أن يصبح كل شيء متجانسًا ، توقف عن الخلط.
