Durante un brunch en casa de una amiga, Carmella, descubrí unos increíbles bollos de cacao y chocolate. Por supuesto, quería hacer algo en casa. Como no tenía una receta, tuve que ingeniármelas. No hay nada difícil en ello. Ya no es realmente pan, porque le pongo azúcar, mantequilla y cacao, pero tampoco es un brioche. Es más bien un pan híbrido que resultará muy delicioso cortado en rodajas con un poco de mantequilla semisalada untada.
Ingredientes para el pan de cacao y chocolate:
250 g de harina T55
30g de cacao sin azúcar
10g de azúcar
1 sobre de levadura seca de panadería
180 ml de agua caliente
20 g de mantequilla semisalada
100 g de chocolate en trozos o chips
Mezclar la harina y el cacao.
Añadir la levadura seca.
Y el azúcar.
Mezclar y luego verter el agua poco a poco mientras se amasa con el gancho. Por supuesto, puedes hacer todo esto a mano.
Amasar durante unos diez minutos y añadir la mantequilla semi-salada.
Amasar de nuevo durante 5 minutos.
Poner un trozo de film transparente encima.
Dejar subir en un lugar cálido durante 1 hora y media o 2 horas. La masa duplica su volumen.
Quitar el gas de la masa aplastándola con las manos.
Añadir los trozos o pepitas.
Vuelve a mezclar.
He dividido la masa en dos, pero se puede hacer un solo pan grande.
Cortar ligeramente la masa y dejarla subir de nuevo de 30 a 45 minutos.
Hornear a 180°C durante 15-20 minutos. Vigílalo y ajusta el tiempo de cocción a tu horno.
¡Deliciosa para el desayuno con un poco de mantequilla semi-salada extendida por encima!
