Durante um brunch na casa de um amigo, Carmella, descobri uns pãezinhos incríveis de cacau e de chocolate. Claro que eu queria fazer alguns em casa. Como não tinha uma receita, tive de a elaborar. Não há nada de difícil nisso. Já não é realmente pão, porque lhe pus açúcar, manteiga e cacau, mas também já não é um brioche. É mais um pão híbrido que será bastante delicioso fatiado com um pouco de manteiga semi-salgada espalhada sobre ele!
Ingredientes para o pão de cacau e de pedaços de chocolate:
250g de farinha T55
30g de cacau não adoçado
10g de açúcar
1 saqueta de levedura seca de padeiro
180ml de água quente
20g de manteiga semi-salgada
100g de pedaços de chocolate ou batatas fritas
Misturar a farinha e o cacau.
Adicionar a levedura seca.
E açúcar.
Misturar e depois deitar na água pouco a pouco enquanto se amassa com o gancho. É claro que tudo isto pode ser feito à mão.
Amassar durante cerca de dez minutos e depois adicionar a manteiga semi-salgada.
Amassar novamente durante 5 minutos.
Colocar um pedaço de película aderente em cima.
Deixar para se levantar num local quente durante 1? a 2 horas. A massa duplica de volume.
Retirar o gás da massa, esmagando-a com as mãos.
Adicionar os bocados ou pepitas.
Misture novamente.
Dividi a massa em dois, mas só se pode fazer um pão grande.
Cortar ligeiramente a massa e deixá-la subir novamente durante 30 a 45 minutos.
Cozer a 180°C durante 15-20 minutos. Fique atento e ajuste o tempo de cozedura ao seu forno.
Delicioso para o pequeno-almoço com um pouco de manteiga semi-salgada espalhada por cima!
