Aquí está la receta de las manzanas «Darphin» y no de las Röstis como había escrito al principio. Estas tortitas de patata son extra crujientes y son el acompañamiento perfecto para la carne o el pollo a la parrilla. Como las manzanas Darphin se preparan con patatas crudas (a diferencia de los rösti, que suelen prepararse con patatas cocidas), la preparación es más rápida pero el tiempo de cocción es mayor. Una pequeña joya que se puede decorar a su gusto.
Las manzanas Darphin se pueden rellenar con lo que se quiera. Por ejemplo, puedes añadir una cebolla rallada por cada dos kilos de patatas, o trozos de bacon o queso…
Receta para dos pasteles grandes:
-1,8 kg de patatas -Grasa de pato, mantequilla o manteca de cerdo -sel
Para esta receta, lo mejor es elegir patatas de pulpa firme.
Pelarlas (los que no tengan todavía un pelador, ¡es imprescindible en la cocina!)
Poner las patatas peladas en un recipiente con agua fresca a medida que se avanza.
Hay dos opciones para rallar las patatas. El robot de cocina eléctrico o la mandolina. Yo elegí la segunda opción.
Se necesita una mandolina con un peine fino y una capa bastante fina. Las manzanas Darphin también se pueden hacer con un rallador de queso con agujeros grandes.
Rallar las patatas.
Para las Pommes Darphin, elijo la opción elegida por el Auberge de Dully, cerca de Lausana, en Suiza. Durante mi viaje culinario (¡vea el reportaje AQUÍ!) pregunté a los cocineros de esta posada por su secreto. Y era grasa de pato.
Poner una buena cucharada de grasa en una sartén pequeña o dos en una grande. Deja que se derrita.
A continuación, añadir las patatas. Se necesita un cierto grosor para que el pastel esté cohesionado.
Dejar cocer a fuego moderado durante 10 minutos con una tapa. Apretar las patatas con una cuchara para que el jugo salga un poco y dé cohesión. Dar la vuelta a las manzanas Darphin como si fueran una tortita.
Volver a cocinar por el otro lado, esta vez sin tapa, hasta que todo el pastel esté dorado.
Servir caliente con un pollo asado recién salido del horno (¡por ejemplo!).
