Aqui está a receita para as maçãs “Darphin” e não para Röstis, como tinha escrito pela primeira vez. Estas panquecas de batata são extra crocantes e são o acompanhamento perfeito para carne grelhada ou frango. Como as maçãs Darphin são preparadas com batatas cruas (ao contrário das rösti, que são normalmente preparadas com batatas cozidas), a preparação é mais rápida mas a cozedura demora mais tempo! Uma pequena jóia que pode ser decorada como desejar.
As maçãs Darphin podem ser enchidas com o que quiserem. Por exemplo, pode adicionar uma cebola ralada por cada dois quilos de batatas, ou pedaços de bacon ou queijo…
Receita para dois bolos grandes:
-1,8 kg de batatas -gordura, manteiga ou banha de porco -sel
Para esta receita, é melhor escolher batatas de carne firme.
Descasca-os (aqueles que ainda não têm um descascador, é um must na cozinha!)
Colocar as batatas descascadas numa tigela de água fresca à medida que se vai.
Há duas opções para ralar batatas. O processador alimentar eléctrico ou o bandolim! Eu escolhi a segunda opção.
É necessário um bandolim com um pente fino e uma camada bastante fina. As maçãs Darphin também podem ser feitas com um ralador de queijo com grandes buracos.
Ralar as batatas.
Para o Pommes Darphin, escolho a opção escolhida pelo Auberge de Dully perto de Lausanne, na Suíça. Durante a minha viagem culinária (ver o relatório AQUI!) pedi aos cozinheiros desta estalagem o seu segredo. E era gordura de pato.
Colocar uma boa colher de sopa de gordura numa pequena panela ou duas numa grande. Deixe-o derreter.
Em seguida, adicionar as batatas. É necessária uma certa espessura para que o bolo seja coeso.
Deixar cozinhar em lume moderado durante 10 minutos com uma tampa. Espremer as batatas com uma colher para que o sumo saia um pouco e dê coesão. Virar as maçãs Darphin como uma panqueca.
Cozinhar novamente do outro lado, desta vez sem tampa, até o bolo inteiro ficar castanho dourado!
Servir quente com um frango assado acabado de sair do forno (por exemplo!).
