ها هي وصفة تفاح “Darphin” وليس Röstis كما كتبت في البداية. فطائر البطاطس مقرمشة للغاية وتتناسب بشكل رائع مع اللحوم المشوية أو الدجاج. نظرًا لأن بطاطس دارفين يتم تحضيرها من البطاطس النيئة (على عكس الروستي التي يتم تحضيرها عادةً بالبطاطس المطبوخة) ، يكون التحضير أسرع ولكن الطهي يستغرق وقتًا أطول! أعجوبة صغيرة يمكنك تزيينها كما يحلو لك.

وصفة قطعتين كبيرتين:

يفضل أن تختار لهذه الوصفة البطاطس ذات اللحم الصلب.
قشرهم (أولئك الذين ليس لديهم مقشرة بعد ، فهو ضروري في المطبخ !!).
ضعي البطاطس المقشرة تدريجيًا في وعاء من الماء العذب.
لبشر البطاطس ، يتوفر لنا خياران. الانسان الالي كهربائي أو المندولين! أنا يختار الخيار الثاني.
أنت بحاجة إلى مندولين بمشط جيد وسمك رقيق إلى حد ما. يمكنك أيضًا صنع تفاح دارفين بمبشرة جبن ذات ثقوب كبيرة.
ابشر البطاطس.
بالنسبة إلى Pommes Darphin ، اخترت الخيار الذي اختاره Auberge de Dully بالقرب من لوزان في سويسرا. خلال رحلتي الطهوية (انظر التقرير هنا! ) كنت قد سألت طهاة هذا النزل عن سرهم. وكانت دهون البط.
ضعي ملعقة كبيرة من الدهون في وعاء صغير موقد أو اثنين في واحدة كبيرة. دعها تذوب.
ثم نضيف البطاطس. يتطلب الأمر سماكة معينة للفطيرة لتكون متماسكة.
يُطهى على نار متوسطة لمدة 10 دقائق بغطاء. اضغط على البطاطس بملعقة حتى يخرج العصير قليلاً ويعطي تماسكًا. اقلب تفاح دارفين مثل فطيرة.
اطبخي مرة أخرى على الجانب الآخر ، هذه المرة بدون غطاء ، حتى يصبح لون البان كيك كله بنياً ذهبياً!
استمتع به ساخناً مع دجاج مشوي خارج الفرن (على سبيل المثال!).
