¡Aquí tienes una nueva receta de macarrones! Te ofrezco mi versión de café y chocolate. Esta vez se trata de cáscaras de macarrones con sabor a café (el color es natural) con una suave ganache de chocolate y café. Los dos crean una ósmosis perfecta, un aroma pleno pero dulce para estos macarrones ambarinos y deliciosamente achocolatados.
3 barritas de café liofilizado (son unos 6g en total)
Ganache de chocolate y café:
-220g de nata líquida
-275g de chocolate al 55%
-40g de mantequilla blanda
3 barritas de café liofilizado
Empieza por hacer una receta de macarrones. Ver aquí para la receta en imágenes. La diferencia es que hay que añadir el café soluble a las claras de huevo que van en el fulano.
Remover bien para disolver el café.
Y añadir las claras al café tanto por tanto.
A continuación, proceda como se explica en la receta.
Para el ganache de chocolate. Calentar la nata líquida y verterla sobre el chocolate troceado (¡o las pastillas como las mías!).
Añadir la mantequilla blanda y batir para combinar.
Añadir el café soluble a la ganache aún caliente. Probablemente puedes ser más lógico que yo ese día y poner el café en la crema calentada, antes de verterla sobre el chocolate. Pero funciona en ambos casos.
Colocar el ganache en una manga pastelera y dejar que se endurezca . Cuando el ganache esté «moldeable», rellenar las conchas de los macarrones.
Cierra los macarrones y déjalos en un recipiente hermético durante 24 horas. Esto es esencial para el desarrollo de la suavidad del macarrón.
