Aqui está uma nova receita de macaroons! Ofereço-lhe a minha versão de café e chocolate. Desta vez são cascas de macarrão com sabor a café (a cor é natural) com um chocolate suave e ganache de café. Os dois criam uma osmose perfeita, um aroma encorpado mas doce para estes macarrões âmbar e deliciosamente achocolatados!
3 paus de café liofilizado (ou seja, cerca de 6g no total)
Ganache de chocolate-café:
-220g de creme completo
-275g de 55% de chocolate
-40g de manteiga mole
3 paus de café liofilizado
Comece por fazer uma receita de macaroons. Ver aqui para a receita em imagens. A diferença é que tem de adicionar o café solúvel às claras de ovo que vão para o so-and-so.
Mexer bem para dissolver o café.
E adicionar os brancos ao café tanto por tanto.
Em seguida, proceder como explicado na receita.
Para os ganaches de chocolate. Aqueça o creme completo e verta-o sobre o chocolate picado (ou pastilhas como as minhas!).
Juntar a manteiga macia e o batedor para combinar.
Adicionar o café solúvel ao ganache ainda quente. Pode provavelmente ser mais lógico do que eu era naquele dia e colocar o café no creme aquecido, antes de o verter sobre o chocolate! Mas funciona em ambos os casos.
Colocar o ganache num saco de tubagem e permitir que este fique firme em . Quando o ganache é “moldável”, encha as conchas de macaroon.
Feche os macaroons e deixe-os num recipiente hermético durante 24 horas! Isto é essencial para o desenvolvimento da suavidade do macaroon.
