Llevo años utilizando el limón confitado con sal en las recetas marroquíes sin haberlas preparado yo nunca. Hace poco volví a Marruecos y fue una amiga, Myriem con nuestra tradicional Touria, quien me dio su método. Es imprescindible utilizar limones ecológicos y tener un poco de paciencia, ya que tardan al menos dos semanas (y francamente más) en estar listos para ser consumidos en un plato delicioso. Pero qué gusto da hacerlas uno mismo, sobre todo si se tiene la suerte de poder cultivarlas en casa.
Receta (o más bien método)
una docena de limones orgánicos
1kg de sal gruesa
Estos son los únicos ingredientes para elaborar los limones curados con sal tan apreciados por nuestros amigos marroquíes. Es fundamental utilizar limones ecológicos no tratados después de la cosecha. Colóquelos en un recipiente grande o en una olla.
Vierta agua hirviendo sobre ella y déjela enfriar a temperatura ambiente. Deben estar completamente cubiertos. Esto los ablandará y facilitará su colocación en el recipiente.
Unas horas más tarde, los limones se enfriaron y se ablandaron. Córtalas en cuartos sin atravesarlas del todo.

Abre el limón (¡no es fácil con la cámara en la otra mano!).
Adornar con sal gruesa.
Debe estar bien lleno.
Colóquelo en el frasco y luego proceda de la misma manera con todos los limones. Colóquelos en el recipiente elegido a medida que avanza. El jugo empezará a salir rápidamente.
Ahora hay que tener paciencia. Se necesita un mínimo de dos semanas (o incluso más como un mes) antes de poder utilizar el limón confitado en sal en una receta. El zumo de los limones suele cubrirlos. Si no es el caso, puede añadir agua. Pero espere 3-4 días y remueva el frasco una vez al día para ver si el jugo no es suficiente.
Puedes conservarlos durante mucho tiempo. Póngalos en un armario alejado de la luz. Si se oxidan y se vuelven ligeramente marrones, no te asustes, estarán muy bien en el Tanjia (ver más abajo).
