لقد كنت أستخدم الليمون المملح بالملح في الوصفات المغربية لسنوات دون أن أجهزها بنفسي. لقد عدت مؤخرًا إلى المغرب وكانت صديقة مريم مع توريا التقليدية التي أعطتني أسلوبها. من الضروري تناول الليمون العضوي والتحلي بالقليل من الصبر ، لأنه يستغرق أسبوعين على الأقل (انظر بصراحة المزيد) حتى يكون جاهزًا لتناوله في طبق لذيذ. ولكن يا لها من متعة أن تجعلها بنفسك ، خاصة إذا كنت محظوظًا بما يكفي لتتمكن من زراعتها في المنزل!
وصفة (أو بالأحرى طريقة!)
دزينة من الليمون العضوي
1 كجم ملح خشن
فيما يلي المكونات الوحيدة لصنع الليمون المحلى بالملح ، العزيزة جدًا على أصدقائنا المغاربة. من الضروري تناول الليمون العضوي غير المعالج بعد الحصاد. ضعهم في وعاء أو وعاء كبير.
صب الماء المغلي فوقه واتركه يبرد إلى درجة حرارة الغرفة. يجب تغطيتها بالكامل. سيسمح لهم ذلك بتليينها وتكديسها بسهولة أكبر في الحاوية.
بعد بضع ساعات ، تبرد الليمون وأصبح أكثر نعومة. اقطعها إلى 4 دون أن تمضي قدمًا.

افتح الليمون (ليس بالأمر السهل بالكاميرا في الجهة الأخرى !!).
زينها بالملح الخشن.
يجب أن تملأ جيدا.
ضعه في البرطمان ثم استمر بنفس الطريقة لجميع الليمون. ضعهم كما تذهب في الحاوية المختارة. سيبدأ العصير في الخروج بسرعة كبيرة.
الآن أنت بحاجة إلى الصبر! يستغرق الأمر أسبوعين على الأقل (أو حتى أكثر من شهر) قبل أن تتمكن من استخدام الليمون المحلى بالملح في الوصفة. عادةً ما يغطيها عصير الليمون. إذا لم يكن كذلك ، يمكنك إضافة الماء. لكن لا تزال تنتظر 3-4 أيام ، مع تحريك البرطمان مرة واحدة يوميًا لمعرفة ما إذا كان العصير غير كافٍ.
يمكنك الاحتفاظ بها لفترة طويلة جدًا. ضعهم في خزانة مظلمة. إذا تأكسدوا وبنيوا قليلاً ، فلا داعي للذعر ، سيكونون جيدًا جدًا في Tanjia (انظر أدناه).
