Há anos que uso o confit de limão com sal nas receitas marroquinas sem nunca as ter preparado eu próprio. Voltei recentemente a Marrocos e foi uma amiga, Myriem com a nossa Touria tradicional, que me deu o seu método. É imperativo utilizar limões orgânicos e ter um pouco de paciência, pois são necessárias pelo menos duas semanas (e francamente mais) para que estejam prontos a comer num prato delicioso. Mas que prazer fazê-los você mesmo, especialmente se tiver a sorte de poder cultivá-los em casa!
Receita (ou melhor, método!)
uma dúzia de limões orgânicos
1kg de sal grosso
Estes são os únicos ingredientes para tornar os limões salgados tão caros aos nossos amigos marroquinos. É essencial a utilização de limões orgânicos não tratados após a colheita. Colocá-los num grande recipiente ou panela.
Verter água a ferver sobre ela e deixá-la arrefecer até à temperatura ambiente. Devem ser completamente cobertos. Isto irá amaciá-los e facilitar o seu acondicionamento no contentor.
Algumas horas mais tarde, os limões arrefeceram e tornaram-se mais suaves. Cortá-los em quartos sem passar por eles.

Abrir o limão (não é fácil com a câmara na outra mão!!).
Guarnição com sal grosso.
Deve ser bem preenchido.
Colocá-lo no frasco e depois proceder da mesma forma com todos os limões. Coloque-os no contentor escolhido à medida que vai avançando. O sumo vai começar a sair muito rapidamente.
Agora precisa de ser paciente! Demora um mínimo de duas semanas (ou até mais como um mês) antes de se poder usar o confit de limão em sal numa receita. O sumo dos limões irá normalmente cobri-los. Se não for este o caso, pode adicionar água. Mas esperar 3-4 dias e agitar o frasco uma vez por dia para ver se o sumo não é suficiente.
Pode mantê-los durante muito tempo. Coloque-os num armário longe da luz. Se eles oxidarem e ficarem ligeiramente castanhos, não entrem em pânico, serão muito bons no Tanjia (ver abaixo).
