Andalucía tiene muchas influencias moriscas y pensé que sería interesante preparar un hojaldre que tuviera en cuenta estas influencias. Una deliciosa espiral de hojaldre rellena de payoyo fundido, un queso de cabra típico de Andalucía, ¡delicadamente condimentado con menta picada! Basta con colocar el hojaldre en el centro de la mesa y todos comparten tomando un trozo. Esta receta es perfecta para acompañar mi sopa fría de pepino y menta Alvalle, que se sirve muy fresca. ¡Un momento para compartir con los demás!
Material especial: un círculo para tartas de 14 cm, un pincel
1Mezclar el requesón, el payoyo cortado en trozos muy pequeños y la menta finamente picada. Sazonar con sal y pimienta.
2Preparar las hojas de filo: colocar una hoja en posición horizontal, pasar Pincelar toda la superficie con aceite de oliva y colocar una hoja encima. Coloca una nueva lámina encima y úntala con aceite de oliva. Continúe de esta manera, colocando las hojas una encima de la otra, mientras se cepilla sólo una de cada dos hojas con aceite. ¿Seguimos?
3Así que tenemos un montón de hojas. En la lámina superior (la que está encima de todas las demás…) colocar la mitad del relleno de queso a lo largo de toda la longitud, a unos 3 cm del borde inferior. Es como hacer maki japonés. Abatible Colocar el hojaldre (todas las hojas) sobre el relleno y enrollarlo bien. Enrollar la masa hasta la mitad del hojaldre. Cortar a la medida. Toma este rollo apretado y enróllalo como un caracol.
4Poner la segunda mitad del relleno en el resto del hojaldre y proceder de la misma manera. Coloca la segunda «bobina» en la prolongación de la primera espiral. Colocar el pudín de caracol en un círculo de tarta de 14 cm de diámetro.
5Colocar en una bandeja de horno forrada con papel de hornear. Hornear a 180°c durante 35 minutos. Se desmolda con cuidado y se sirve caliente y crujiente con la sopa fría de pepino y menta.
