A Andaluzia tem muitas influências mouriscas e pensei que seria interessante preparar uma massa folhada que tivesse em conta estas influências. Uma deliciosa espiral de massa folhada recheada com payoyo derretido, um típico queijo de cabra andaluza, delicadamente temperado com menta picada! Equipamento especial: um círculo de torta de 14 cm, um pincel
1Misturar a ricotta, o payoyo cortado em pedaços muito pequenos e a hortelã finamente picada. Tempere com sal e pimenta.
2Preparar as folhas de filo: colocar uma folha plana, passe pincelar toda a superfície com azeite e colocar uma folha em cima. Colocar uma nova folha em cima e pincelá-la com azeite de oliva. Continuar desta forma, colocando as folhas umas em cima das outras, enquanto escovam apenas todas as outras folhas com óleo. Ainda estamos a seguir?
3Temos, portanto, uma pilha de folhas. Na folha superior (a de cima de todas as outras…) colocar metade do recheio de queijo ao longo de todo o comprimento, a cerca de 3 cm da borda inferior. É como fazer maki japonês. Dobrar Coloque a massa folhada (todas as folhas) em cima do recheio e enrole-a bem. Enrolar a massa até metade da massa folhada. Cortado à medida. Pegue neste rolo apertado e enrole-o como um caracol.
4Colocar a segunda metade do recheio na massa folhada restante e proceder da mesma forma. Colocar a segunda “bobina” na extensão da primeira espiral. Colocar o pudim de caracol num círculo de tarte de 14cm de diâmetro.
5Colocar sobre um tabuleiro forrado com papel vegetal. Cozer a 180°c durante 35 minutos. Sair com cuidado e servir quente e estaladiço com a sopa fria de hortelã de pepino.
