Hace mucho tiempo, te presenté el pão de queijo (ver mi receta AQUÍ). Desde hace un tiempo, estos gofres salados con queso aparecen en Brasil. Son naturalmente libres de gluten gracias al almidón de tapioca. Están listos para cocinar en pocos minutos y son especialmente crujientes y muy suaves por dentro… Una delicia.
Para unos diez gofres de queijo:
275 g de almidón de tapioca
250 ml de leche semidesnatada
100 g de mantequilla semisalada
1 huevo de 60g
50 g de queso parmesano
75 g de queso emmental rallado
Hago un pequeño recordatorio, aunque ya lo he mencionado varias veces. Se trata del almidón de tapioca, a veces llamado harina de tapioca. Sin embargo, es un almidón y se puede encontrar en las tiendas de alimentación asiáticas y en algunas tiendas de productos ecológicos. Al presionar el paquete, debe crujir como la nieve o la harina de maíz…
Poner la harina de maíz y la sal en un bol o en un robot de cocina tipo KitchenAid.
Verter la leche y la mantequilla en un cazo.
Derretir a fuego lento.
Verter en el almidón mientras se mezcla.
Añadir el huevo y los quesos y mezclar de nuevo.
Calienta tu gofrera y vierte dos cucharadas de masa.
Cerrar la gofrera y darle la vuelta. Aquí se puede ver la masa a mitad del proceso de cocción.
