Há muito tempo atrás, apresentei-vos ao pão de queijo (ver a minha receita AQUI). Há já algum tempo que estes waffles salgados com queijo têm vindo a aparecer no Brasil. São naturalmente sem glúten graças à fécula de tapioca. Estão prontos para cozinhar em poucos minutos e são especialmente estaladiços e muito macios por dentro… Uma delícia!
Para cerca de dez waffles de queijo:
275g de fécula de tapioca
250ml de leite semi-desnatado
100g de manteiga semi-salgada
1 ovo de 60g
50g de queijo parmesão
75g de queijo Emmental ralado
Estou a fazer um pequeno lembrete, apesar de já o ter mencionado várias vezes. Isto é amido de tapioca que por vezes é chamado farinha de tapioca. É, no entanto, um amido e pode ser encontrado em mercearias asiáticas e em algumas lojas de produtos orgânicos. Quando se pressiona o pacote, ele deve estalar como neve ou farinha de milho.
Colocar a farinha de milho e o sal numa tigela ou num processador de alimentos do tipo KitchenAid.
Verter o leite e a manteiga numa caçarola.
Derreter em lume brando.
Verter para o amido enquanto se mistura.
Adicionar o ovo e os queijos e misturar novamente.
Aqueça a sua máquina de waffles e despeje em duas colheres de sopa de massa.
Fechar a chapa de waffle e virá-la. Aqui pode ver a massa a meio do processo de cozedura.
