En mi blog de cocina, ya había propuesto el gazpacho clásico (receta AQUÍ), el salmorejo (receta AQUÍ) y el gazpacho de aguacate y menta (receta AQUÍ). Tenía muchas ganas de hacer un gazpacho verde con bonitas verduras ecológicas para juntarlas sin pelarlas en la batidora. Está listo en pocos minutos. Después, mételo en la nevera durante unas horas para servirlo frío y llenarte de vitaminas. Una delicia para hacer y repetir cuando el tiempo es cálido y soleado…
Receta para 6 personas :
5 tomates verdes
1 pimiento verde
3 calabacines pequeños
1/2 pepino
250 g de guisantes
1/2 cebolla blanca
1 diente de ajo
8g de sal
50g de aceite de oliva
30 g de vinagre de vino blanco
1 manojo pequeño de albahaca tailandesa o albahaca clásica
unas hojas de menta
500 ml de agua
¡Sólo con las verduras me dan ganas de hacerlo!
Lávalos y córtalos en trozos.
Retirar las semillas del pimiento verde. Poner los tomates verdes, los calabacines y el pimiento en la batidora.
Un primer golpe de licuadora. Poner el medio pepino.
Licuar, añadir el diente de ajo y la media cebolla blanca.
Para los guisantes, cocerlos durante 11 minutos en agua hirviendo.
A continuación, enjuáguelas en agua fría hasta que se enfríen.
Métete en la batidora.
Agrego mi menta y albahaca tailandesa.
Hacer un puré bien y verterlo en un recipiente grande.
Añadir sal, vinagre y aceite de oliva.
Verter el agua hasta la consistencia deseada, por mi parte, alrededor de medio litro de agua fría. Sin ella, el gazpacho queda muy blando por los guisantes y los calabacines.
