No meu blog culinário, já tinha proposto o gaspacho clássico (receita AQUI), o salmorejo (receita AQUI) e o gaspacho de abacate de menta (receita AQUI). Eu queria mesmo fazer um gaspacho verde com belos vegetais orgânicos para os juntar sem os descascar no liquidificador. Está pronto em apenas alguns minutos. Depois coloque-o no frigorífico durante algumas horas para o servir frio e enchê-lo de vitaminas! Um deleite para fazer e repetir quando o tempo está quente e ensolarado…
Receita para 6 pessoas :
5 tomates verdes
1 pimenta verde
3 pequenas abobrinhas
1/2 pepino
250g de ervilhas
1/2 cebola branca
1 dente de alho
8g de sal
Azeite de 50g
30g de vinagre de vinho branco
1 pequeno ramo de manjericão tailandês ou manjericão clássico
algumas folhas de hortelã-pimenta
500ml de água
Só os legumes dão-me vontade de o fazer!
Lavá-los e cortá-los em pedaços.
Retirar as sementes da pimenta verde. Colocar os tomates verdes, abobrinhas e pimenta no liquidificador.
Um primeiro golpe de liquidificador. Colocar o meio pepino.
Misturar, adicionar o dente de alho e a meia cebola branca.
Para as ervilhas, cozinhá-las durante 11 minutos em água a ferver.
Em seguida, enxaguá-los em água fria até estarem frios.
Saltar para o misturador.
Acrescento a minha hortelã-pimenta e manjericão tailandês.
Purificar bem e verter para um grande recipiente.
Adicionar sal, vinagre e azeite de oliva.
Deitar na água com a consistência desejada, pela minha parte, cerca de meio litro de água fria. Sem ele, o gaspacho é muito mole por causa das ervilhas e courgettes.
A diferença na consistência é clara!
Arrefecer durante pelo menos 3 horas antes de servir.
