El pasado mes de noviembre fui a Périgueux, como cada dos años, a la feria de libros de cocina. He estado yendo constantemente desde mi primer libro en 2014. Esta vez probé una tarta de nueces muy parecida a la que hoy os presento, aunque ésta la he confeccionado yo, con mi interpretación. El resultado es excelente. La nuez es omnipresente. Primero en el hojaldre con chocolate y luego en el relleno con un poco de vino de nueces, que le da una cremosidad y frescura inesperadas. Desde el primer intento, fue el que me gustó (¡aunque hice varios para estar segura!). Puede conservarse durante varios días, o incluso más de una semana.
Receta para un molde de 18 cm:
140 g de mantequilla semisalada
185 g de azúcar moreno
65 g de chocolate negro fundido
220 g de harina
140g de nueces
20 g de cacao en polvo sin azúcar
40g de huevo
Para el forraje :
140g de nueces
50g de azúcar
30g de huevo
25 g de agua de nueces (vino de nueces) o de vino de Oporto
Poner todos los frutos secos (280g, pasta+relleno) en una batidora y pulsar hasta obtener un polvo grueso.
Poner la mantequilla semi-salada y el azúcar moreno en un procesador de alimentos o en un bol.
Mezclar hasta obtener una crema homogénea. Añadir los 40g de huevo (batir un huevo en tortilla y pesarlo) y el chocolate negro derretido.
Mezclar y añadir la harina, los 140 g de frutos secos en polvo y el cacao en polvo.
Sólo hay que mezclar hasta conseguir una pasta suave. Colocar en un lugar fresco mientras se hace el relleno.
Poner en un bol los 140 g de nueces restantes, el azúcar, los 30 g de huevo y el vino de nueces. Mezclar bien.
En un trozo de papel sulfurizado, extender la mitad de la masa con un grosor de 8 mm.
Extiende la otra mitad a un lado. Colocar el relleno en el centro de una de las piezas de hojaldre.
Asegúrese de dejar un margen de 1,5 cm alrededor del relleno para que quepa en el molde utilizado. Colocar la segunda masa sobre el relleno. Para esta receta utilizo un molde con base desmontable.
Corté el exceso de masa con el borde del molde. Con el resto, puedes hacer pan de molde.
El resultado es un pastel perfecto.
Poner un papel cortado en círculo del tamaño del molde para el fondo y una tira para el borde. Colocar el pastel en el molde. Como es del tamaño del molde, puede ser necesario reducir su tamaño apretando a mano para que encaje.
Hornear durante 50 minutos en un horno precalentado a 160°C.
Dejar que se enfríe por completo. Será mejor al día siguiente.
