Em Novembro passado, fui a Périgueux, como faço de dois em dois anos, para a feira do livro de receitas. Tenho estado a ir consistentemente desde o meu primeiro livro em 2014. Desta vez provei um bolo de noz que era muito semelhante ao que vos apresento hoje, embora este tenha sido inventado por mim, com a minha interpretação. O resultado é excelente. A porca é omnipresente. Primeiro na pastelaria com chocolate e depois no recheio com um pouco de vinho de noz, o que dá uma cremosidade e frescura inesperadas. Desde a primeira tentativa, foi aquela de que gostei (embora tenha feito várias para ter a certeza!). Pode ser guardado durante vários dias, ou mesmo mais de uma semana.
Receita para um molde de 18cm:
140g de manteiga semi-salgada
185g de açúcar castanho
65g de chocolate preto derretido
220g de farinha
140g de nozes
20g de cacau em pó não adoçado
40g de ovo
Para forragens :
140g de nozes
50g de açúcar
30g de ovo
25g de água de nozes (vinho de nozes) ou vinho do Porto
Colocar todas as nozes (280g, pasta+enchimento) num liquidificador e pulsar num pó grosseiro.
Colocar a manteiga semi-salgada e o açúcar mascavado num processador de alimentos ou numa tigela.
Misture até obter um creme homogéneo. Adicionar os 40g de ovo (bater um ovo numa omelete e pesá-lo) e o chocolate preto derretido.
Misturar e adicionar a farinha, os 140g de pó de nozes e o cacau em pó.
Basta misturar com uma pasta macia. Colocar num local fresco enquanto se faz o enchimento.
Colocar os restantes 140g de nozes, o açúcar, os 30g de ovo e o vinho de nozes numa tigela. Misturar bem.
Sobre um pedaço de papel vegetal, estender metade da massa até uma espessura de 8mm.
Espalhar a outra metade para o lado. Colocar o recheio no centro de uma das peças de pastelaria.
Certifique-se de deixar uma margem de 1,5 cm à volta do recheio para caber na forma de bolo que está a ser utilizada. Colocar a segunda pastelaria em cima do recheio. Para esta receita utilizo uma lata de bolo com uma base removível.
Eu corto o excesso de massa com a borda do molde. Com o resto, pode fazer biscoitos curtos!
O resultado é um bolo perfeito.
Colocar um corte de papel num círculo do tamanho do molde para o fundo e uma tira para o bordo. Colocar o bolo na lata. Como é quase do tamanho do molde, pode precisar de ser reduzido em tamanho por aperto manual para caber.
Cozer durante 50 minutos num forno pré-aquecido a 160°C.
Deixá-lo arrefecer completamente. Será melhor no dia seguinte!
