¡Las fotos no hacen justicia a este exquisito plato! Aquí está la receta de Nadine para las Gambas flambeadas Una receta rápida, sencilla y sobre todo deliciosa. El toque de originalidad de esta receta es que Nadine flambeó sus gambas con vino de Oporto. Y el resultado es sorprendente. Una nota dulce que combina perfectamente con el ajo, la cebolla y el perejil y que subraya de forma ideal el sutil sabor de estos mariscos.
Receta de «gambas flambées de Nadine» para 4 personas:
-20 langostinos grandes
-4 o 5 dientes de ajo
-1/2 manojo de perejil, finamente picado
-1 cebolla
-40g de mantequilla salada
-10 cl de oporto
-sal pimienta
Empieza por pelar el ajo y la cebolla. Cortar la cebolla en trozos y el ajo en rodajas.
Poner la mantequilla a fuego moderado. Cuando se dore, añadir el ajo.
Dejar que el ajo se coloree ligeramente y desarrolle su sabor. Añadir la cebolla y el perejil.
Mezclar bien y colocar los langostinos (sin la cabeza pero con su cáscara) sobre el lecho de ajo, cebolla y perejil.
Aumentar ligeramente el fuego. Dar la vuelta a las gambas para que se cocinen por el otro lado.
Calentar el vino de Oporto en una cacerola pequeña.
Flamear el vino de Oporto y verterlo sobre las gambas.
El consejo de Bernard: para flambear, vierto el alcohol frío directamente en la sartén y luego flambeo. Pero a cada uno lo suyo.
Remover bien para fundir los jugos del fondo de la sartén.
Servir los langostinos inmediatamente tal cual o con arroz.
