As fotos não fazem justiça a este prato requintado! Aqui está a receita de Nadine para Gambas flambé Uma receita rápida, simples e acima de tudo deliciosa. O toque de originalidade nesta receita é que Nadine flambou os seus camarões com vinho do Porto. E o resultado é surpreendente! Uma nota doce que combina perfeitamente com o alho, a cebola e a salsa e que, idealmente, sublinha o sabor subtil destes moluscos.
Receita para “gambas flambées de Nadine” para 4 pessoas:
-20 camarões grandes
-4 ou 5 dentes de alho
-1/2 salsa em grupo, finamente picada
-1 cebola
-40g de manteiga com sal
-10cl de porto
-sal, pimenta
Comece por descascar o alho e a cebola. Cortar a cebola em pedaços e o alho em fatias.
Colocar a manteiga em lume moderado. Quando se parda, acrescentar o alho.
Deixar o alho colorir ligeiramente e desenvolver o seu sabor. Acrescentar a cebola e a salsa.
Misturar bem, depois colocar os camarões (sem a cabeça mas com as suas conchas) na cama de alho, cebola e salsa.
Aumentar ligeiramente o calor. Virar os camarões para cozinhar o outro lado.
Aquecer o vinho do Porto numa pequena caçarola.
Flambar o vinho do Porto e despejá-lo sobre os camarões.
O conselho de Bernard: para flambar, deito o álcool frio directamente na frigideira e depois flambé! Mas a cada um o seu!
Mexer bem para derreter os sucos no fundo da frigideira.
Sirva os camarões imediatamente como está ou com arroz!
