¡Y sí! ¡Otra receta «clon»! Me encanta y es un buen ejercicio. Es como ensayar escalas y luego componer. Me gusta innovar, pero cuando una receta ya tiene éxito, también me gusta encontrar el método que ha llevado a ese éxito. Hoy se trata de galletas de sésamo y girasol, más conocidas como «cocottes». Una galletita muy sencilla pero muy sabrosa. También me gusta el hecho de que tenga forma de cojín. Y por una vez, te ofrezco una receta de galletas, sin rodillo ni pistola de amasar. El resultado son unas magdalenas irregulares y muy apetecibles.
Receta de galletas de semillas:
-320g de harina tipo 55 -170g de azúcar en polvo -75g de semillas de sésamo tostadas -90g de semillas de girasol -3/4 cucharadita de levadura en polvo (4g) -3/4 cucharadita de sal (4g) -75g de mantequilla blanda -45g de aceite de colza -30g de huevo (basta con batir un huevo con un tenedor y luego pesar 30g) -70g de agua
Colocar la harina, el azúcar, las semillas de sésamo y las semillas de girasol en un procesador de alimentos (como una Kitchenaid) o en un bol grande.
Añadir la sal y la levadura en polvo y mezclar bien.
Derretir la mantequilla y añadir el aceite de colza.
Añadir esta mezcla de grasa al bol.
Añade también los 30 gramos de huevo y el agua.
Mezclar con la hoja (la «k» del robot de cocina) hasta que la masa sea homogénea.
Si falta agua, añadir por cucharadas. La masa no debe deshacerse, sino que debe agruparse.
Hacer una bola con la masa.
Colar y dejar reposar en un lugar fresco durante una o dos horas.
Precalentar el horno a 180°C.
Coge una bola de masa del tamaño de una pelota de tenis.
Enharinar ligeramente la superficie de trabajo y formar una bola con la masa.
E incluso en una salchicha muy fina de un centímetro de diámetro.
Aplastar toda la salchicha con la palma de la mano.
A continuación, cortar rodajas de 4 cm con un cuchillo.
Colocar el shortbread en una bandeja de horno forrada con papel de hornear.
Hornear durante 15-17 minutos, vigilando (¡adaptar a su propio horno!). El bizcocho debe estar dorado. Dejar enfriar sobre una rejilla.
Colóquelo en una caja hermética del tipo «lock & lock». Las galletas de semillas pueden conservarse durante varios días.
