Vamos, ¡otra receta de galletas ya me dirás! ¡Y sí! Pero no puedo resistirme a probar nuevas proporciones… Y ahora que se acerca el día de San Valentín, pensé que era el momento de utilizar mi molde kitsch en forma de corazón. Así que atenúa las luces, enciende las velas, pon algo de Barry White y ponte el delantal para hacer esas galletas «cocochocolove». ¿Qué los hace especiales? Son irresistibles… Sí, por supuesto, pero aún así… He utilizado pistolas Valrhona como pepitas y coco seco tostado para darles una textura inimitable… ¿Con quién compartirás este corazón derretido?
Receta para Galletas «CocoChocoLove» (para 15 galletas o 1 corazón gigante y algunas galletas):
-110g de mantequilla blanda -100g de azúcar en polvo -95g de vergeoise marrón o rubio -1 huevo -1 cucharadita de vainilla líquida -1/4 cucharadita de sal -170g de harina -1/4 de cucharadita de bicarbonato de sodio -65g de coco seco, rallado -220g de pistolas de chocolate negro 65% cacao
Precaliente el horno a 180°C. Verter el coco desecado rallado (sin azúcar) en una bandeja de horno forrada con papel de hornear.
Colóquelo en el horno y cocínelo, revolviendo ocasionalmente, durante 10 a 12 minutos hasta que el coco esté dorado. Dejar enfriar.
Poner el azúcar en polvo, la sal, la vergeoise y la mantequilla blanda en un bol grande.
Mezcle todo con una cuchara o con la «k» de su procesador de alimentos.
Añadir la vainilla líquida y el huevo.
Mezclar hasta obtener una crema homogénea.
Añadir el coco tostado y enfriado.
En un bol, mezclar el bicarbonato y la harina.
Añadir al recipiente y mezclar.
Por último, añada las pistolas de chocolate. Aquí utilicé Valrhona Manjari, cuya acidez combina perfectamente con el coco.
Mezclar con la «k» del robot de cocina o a mano.
Si tienes un «círculo» en forma de corazón, engrásalo con mantequilla o spray desmoldante y colócalo en una bandeja de horno cubierta con papel de hornear. Rellenar el fondo de 7 a 8 mm de espesor.
Hornear durante unos 20 minutos para un tamaño grande.
Retirar de la sartén y pasar a una rejilla para hornear.
Para las galletas clásicas, formar bolas de 50-60g con suficiente espacio entre ellas.
Cocinar de 10 a 12 minutos. Saldrán relativamente hinchados y volverán a caer 5 minutos después.
Lo más importante es no cocer demasiado la masa. Es entonces cuando está en su mejor momento. Disfrútalos templados, que es cuando están en su mejor momento y el chocolate sigue derretido pero ya no está caliente.
