Vá lá, outra receita de biscoitos que me dirá! E sim! Mas não resisto a testar novas proporções… E depois, com o Dia dos Namorados a chegar, pensei que era altura de usar o meu molde em forma de coração kitsch! Apaga as luzes, acende as velas, põe um pouco de Barry White e põe o avental para fazer aqueles biscoitos “cocochocolove”! O que os torna especiais? Eles são irresistíveis… Sim, claro, mas mesmo assim? Usei pistolas Valrhona como pepitas e coco seco torrado para lhes dar uma textura inimitável… Com quem irá partilhar este coração em fusão?
Receita para “CocoChocoLove” Biscoitos (para 15 biscoitos ou 1 coração gigante e alguns biscoitos):
-110g de manteiga mole -100g de açúcar pilão -95g de vergeoise castanha ou loira -1 ovo -1 colher de chá de baunilha líquida -1/4 colher de chá de sal -170g de farinha -1/4 colher de chá de bicarbonato de sódio -65g de coco seco, ralado -220g de pistolas de chocolate negro 65% cacau
Pré-aqueça o seu forno a 180°C. Verter o coco ralado desidratado (não adoçado) sobre um tabuleiro forrado com papel vegetal.
Colocar no forno e cozinhar, mexendo ocasionalmente, durante 10 a 12 minutos até o coco ficar castanho dourado. Deixar arrefecer.
Colocar o açúcar de rícino, sal, vergeoise e manteiga mole numa tigela grande.
Misture tudo junto com uma colher ou o “k” do seu processador de alimentos.
Acrescentar a baunilha líquida e o ovo.
Misturar para obter um creme homogéneo.
Adicionar o coco tostado e arrefecido.
Numa tigela, misturar o bicarbonato de sódio e a farinha.
Acrescentar ao recipiente e misturar.
Finalmente, adicionar as pistolas de chocolate. Utilizei aqui Valrhona Manjari, cuja acidez se mistura perfeitamente com o coco.
Misturar com o “k” do processador de alimentos ou à mão.
Se tiver um “círculo” em forma de coração, untá-lo com manteiga ou spray de libertação e colocá-lo sobre um tabuleiro de ir ao forno coberto com papel vegetal. Encher o fundo com 7-8mm de espessura.
Cozer durante cerca de 20 minutos para um tamanho grande.
Retirar da panela e transferir para uma assadeira.
Para biscoitos clássicos, formar bolas de 50-60g com espaço suficiente entre eles.
Cozinhar durante 10 a 12 minutos. Sairão relativamente inchados e voltarão a cair 5 minutos depois.
O mais importante é não cozer a massa em demasia! É aí que está no seu melhor. Desfrute-os quentes, é quando estão no seu melhor e o chocolate ainda está derretido mas já não está quente!
