Muchos de vosotros me pedís recetas sin gluten, principalmente sin harina. Con la llegada del otoño, me apetecía un pastel de miel y avellanas muy sencillo, crudo y sin adornos, y por eso os ofrezco esta receta que no contiene harina. Ya hay varios en el blog, así que incluso estoy pensando en hacer una pestaña de recetas sin gluten para ti.
Receta de fondant de miel y avellanas para un molde de 15 cm:
-75g de mantequilla semi-salada
-95g de azúcar de caña integral
-25g de miel
-1 cucharadita de vainilla líquida
-190g de polvo de avellana (o mitad de almendra, mitad de avellana)
-140g de huevo
Derretir la mantequilla semi-salada y mezclar con el azúcar de caña integral, la miel y la vainilla.
Añadir los huevos pesados (unos 3 huevos medianos).
Mezclar bien y añadir el polvo de avellana. Se puede utilizar la mitad de almendras y la mitad de avellanas, ya que las avellanas pueden ser asquerosas por sí solas.

Untar un molde con mantequilla y forrar el fondo con papel de hornear. Verter la masa y cocer en el horno precalentado a 155°C durante unos 45 minutos. Lo hice en un molde de 15 cm. Si lo hace en un molde de 20 cm, multiplique todos los ingredientes por 1,77.
El pastel debe estar cocido y ligeramente dorado en la superficie.
Sacar y enfriar sobre una rejilla antes de comer pequeñas porciones.
