Los Financiers son unos deliciosos pastelitos que fueron creados hacia 1890 por el pastelero Lasne, en los alrededores de la Bolsa de París. Tienen forma de lingote de oro y se llamaron así para atraer al cliente rico de la esquina, el financiero de la bolsa. Fue un éxito inmediato. Y entendemos por qué. Aquí propongo una variante de pistacho.
Mezclar todos los ingredientes, excepto la mantequilla, en un bol. Mezclar bien para incorporar la pasta de pistacho.
Derretir la mantequilla en un cazo hasta que haga espuma.
Añadirlo directamente a la pasta de almendras y mezclar bien.
Verter la masa en los moldes de mini-financiero y hornear directamente en el horno durante 15 a 20 minutos (dependiendo de la potencia del horno).
No deben estar demasiado cocidos, sólo un poco agrietados por encima y ligeramente dorados. Si no se comen durante el día (¡lo cual es raro!), guárdelas en una caja hermética.
