Cuando fui a Rabat, mis amigos me pidieron inmediatamente que probara estas pequeñas maravillas. Con ojos grandes y esperanzados, esperaron a ver si podía clonar la receta. No parecía demasiado complicado, pero tuve que repetirlo tres veces para conseguir los mismos turroncitos crujientes de sésamo. Dudaba entre un nougatine preparado a la manera tradicional o un caramelo horneado en pequeños moldes. También buscó el porcentaje correcto de chocolate para que la gianduia (la pasta de chocolate y avellanas) tuviera la consistencia perfecta. Os dejo las fotos de la receta para que os podáis imaginar el sutil sabor y textura de estos pequeños turrones de «encaje» de sésamo.
Poner en un cazo el azúcar, el agua y el jarabe de glucosa.
Llevar a ebullición y calentar a 112°C (¡al menos así no queda agua!).
Retirar del fuego y añadir la mantequilla salada y las semillas de sésamo a la vez.
¡Te recuerdo de nuevo que esto se hace fuera del fuego!
Mezclar bien hasta que la mantequilla esté bien incorporada.
Colocar media cucharadita del almíbar en los moldes de silicona. Sólo se debe rellenar la mitad de la superficie de los moldes, ya que el caramelo se extenderá durante la cocción.
Hornee durante 15-17 minutos (¡vigile y ajuste !) a 180°C. El caramelo debe ser de color ámbar sin estar quemado.
Dejar enfriar unos minutos y desmoldar.
Mientras se cuece el turrón, fundir el chocolate y añadir la pasta de avellanas. pasta de avellanas .
Mezclar bien y dejar enfriar. Esta es Gianduja.
Cuando el praliné esté maleable (el chocolate cristaliza) y pastoso, póngalo en un bolsillo con una punta n°14 (para un buen resultado) o con una cuchara (¡es una pena!). Adornar la mitad de los turrones por el lado liso (lado rugoso hacia abajo).
Nota de Bernard: se puede rellenar el lado rugoso y mantener el lado liso en el exterior. Pero ¡cuidado con las huellas dactilares! Deben manipularse con guantes de látex.
Poner un segundo turrón para cerrar.
Presionar ligeramente para no romper el turrón.
Guarde estos delicados turrones en un lugar seco. ¡Mastica un café!
