Quando fui a Rabat, os meus amigos pediram-me imediatamente para experimentar estas pequenas maravilhas. Com olhos grandes e esperançosos, esperaram para ver se eu podia clonar a receita! Não me pareceu muito complicado, mas tive de repetir três vezes para obter os mesmos pequenos nougatinhos crocantes de gergelim. Estava a hesitar entre um nougatine preparado da forma tradicional ou um caramelo cozido em pequenos moldes. Eu também procurei encontrar a percentagem certa de chocolate para fazer o gianduia (a pasta de avelã de chocolate) a consistência perfeita. Vou deixar-vos as fotografias da receita para que possam imaginar o sabor e textura subtis destes pequenos nougatines “de sésamo”.
Receita para cerca de cinquenta pequenos nougatines:
Colocar o açúcar, água e xarope de glucose numa caçarola.
Levar à ebulição e ao calor a 112°C (pelo menos desta forma não há mais água!).
Retirar do lume e adicionar a manteiga salgada e as sementes de sésamo de uma só vez.
Lembro-vos mais uma vez que isto é feito fora do fogo!
Misturar bem até que a manteiga esteja bem incorporada.
Colocar meia colher de chá do xarope nos moldes do(s) molde(s) de silicone. Apenas metade da superfície dos moldes deve ser preenchida, uma vez que o caramelo se espalhará durante a cozedura.
Cozer durante 15-17 minutos (ver e ajustar!) a 180°C. O caramelo deve ser âmbar sem ser queimado!
Deixar arrefecer durante alguns minutos, depois remover do molde.
Enquanto o nougatine está a cozinhar, derreter o chocolate e adicionar a pasta de avelã. pasta de avelã .
Misturar bem e deixar arrefecer. Este é Gianduja.
Quando a pralina for maleável (o chocolate cristaliza) e pastosa, colocá-la num bolso com uma ponta n°14 (para um bom resultado) ou com uma colher (é uma vergonha!). Guarneça metade dos nougatines no lado liso (lado rugoso para baixo).
Nota de Bernard: pode preencher o lado rugoso e manter o lado liso no exterior. Mas cuidado com as impressões digitais! Devem ser manuseadas com luvas de látex.
Colocar um segundo nougatine para fechar.
Pressione ligeiramente para não quebrar o nougatine.
Mantenha estes delicados nougatines num lugar seco! Mastigue um café!
