Después del curry verde, el curry amarillo y el curry massaman, viene el curry rojo. Como siempre, presento la receta completa, incluyendo la preparación de la pasta de curry «casera». Pero también se puede preparar el curry con una pasta de curry rojo ya preparada. Este cremoso curry con piña y cerdo (se puede cambiar la carne y sustituir la piña por verduras) desprende notas de galanga, hierba limón, combava, chiles rojos, por supuesto, albahaca tailandesa y es especialmente sabroso con piña fresca… ¡Absolutamente maravilloso con arroz pegajoso!
Receta de curry rojo para 6 personas:
Pasta de curry rojo: 8 chiles rojos largos secos rehidratados -3 pimientos rojos de pájaro -1/2 cucharadita de sal -la cáscara de una combava -1 cucharadita de galanga finamente picada 1 cucharadita de raíces picadas cilantro -3 cucharadas de ajo finamente picado 2 cucharadas de chalotas finamente picadas
Curry rojo: -3 cucharadas de aceite 2-3 cucharadas de pasta de curry rojo -1 litro de leche de coco para cocinar -600 a 800g de carne de cerdo (yo usé medio lomo y medio cerdo) -1 piña fresca -10 hojas de kaffir -10 hojas de albahaca tailandesa -1 o 2 cucharadas de salsa de pescado (nuoc nam) -30 a 40g de azúcar de palma
Comience por remojar los chiles secos en agua caliente durante una hora. Sácalas y retira las semillas y el lazo superior. Escurrir bien.
Triturar en un mortero (o en una batidora pequeña) con la sal.
Preparar los pimientos de ave quitando el rabo y las semillas. Deja algunos para que el curry sea un poco picante. Pero una docena de semillas de chile es más que suficiente. Preparar las raíces de cilantro.
Picar las semillas y los chiles .
Añadir al mortero y machacar bien.
Picar el galangal y lavar bien la combava.
Rallar la combava y añadir la cáscara al mortero. Añadir una cucharada de galanga picada.
Picar la chalota y añadir la cantidad deseada al mortero.
Haga lo mismo con el ajo.
Triturar bien hasta obtener una pasta homogénea.
Poner el aceite en un wok o sartén alta. Calentar a fuego moderado y añadir dos o tres cucharadas de pasta de curry rojo.
Cocer la masa hasta que haya absorbido todo el aceite. Añadir poco a poco, sin dejar de remover, la mitad de la leche de coco.
Mientras tanto, cortar la carne elegida (en este caso de cerdo) en rodajas y luego en trozos.
Añadir la carne al curry caliente. Cocer a fuego moderado.
Prepare la piña fresca.
Retirar la cáscara, la sección central y cortar en 8 partes y luego en pequeñas rodajas.
Añade la piña.
Mientras se cocina, se añaden las hojas de kaffir lavadas, el azúcar de palma y la salsa de pescado. Añadir el resto de la leche de coco hasta que el picante sea agradable. Ajustar el condimento en salsa de pescado.
El consejo de Bernard: El curry tailandés no adquiere todos sus sabores con azúcar y salsa de pescado. Es un poco como la sal y la pimienta del curry. Por lo tanto, ¡es necesario probar y rectificar con estos dos elementos!
Añadir las hojas de albahaca tailandesa.
Cocinar hasta que esté cremoso. En efecto, a pesar de la presencia de la leche de coco «de cocción especial», que es más cremosa que la leche de coco líquida (para el tom kah gai), la adición de piña, que hace su jugo en el curry, añade su parte de líquido. Por lo tanto, hay que dejarlo cocer, por un lado para que quede cremoso y por otro para ablandar la carne de cerdo, que es dura al principio de la cocción y más tierna cuando se cocina durante más tiempo.
