Depois do caril verde, caril amarelo, caril massaman, vem o caril vermelho. Como habitualmente, apresento toda a receita, incluindo a preparação da pasta de caril “caseira”. Mas também se pode preparar o caril com uma pasta de caril vermelha pronta a fazer. Este cremoso caril com ananás e carne de porco (pode trocar a carne e substituir o ananás por vegetais) emite notas de galanga, erva-limão, combava, malaguetas vermelhas, claro, manjericão tailandês e é particularmente saboroso com ananás fresco… Absolutamente maravilhoso com arroz pegajoso!
Receita de caril vermelho para 6 pessoas:
Pasta de caril vermelho: 8 malaguetas vermelhas secas longas reidratadas -3 pimentos vermelhos de pássaro -1/2 colher de chá de sal – a vontade de uma combava -1 colher de chá de galanga finamente cortada 1 colher de chá de raízes cortadas coentros -3 colheres de sopa de alho finamente picado 2 colheres de sopa chalotas finamente picadas
Caril vermelho: -3 colheres de sopa de óleo 2-3 colheres de sopa de pasta de caril vermelho -1 litro de leite de coco para cozinhar -600 a 800g de carne de porco (usei metade lombo e metade carne de porco) -1 ananás fresco -10 folhas de kaffir -10 folhas de manjericão tailandesas -1 ou 2 colheres de sopa de molho de peixe (nome nuoc) -30 a 40g de açúcar de palma
Comece por mergulhar as malaguetas secas em água quente durante uma hora. Retirá-las e remover as sementes e a gravata superior. Drenar bem.
Moer num almofariz (ou pequeno misturador) com o sal.
Preparar os pimentos das aves, removendo a cauda e as sementes. Deixe alguns para que o caril fique um pouco picante! Mas uma dúzia de sementes de malagueta é mais do que suficiente! Preparar as raízes dos coentros.
Cortar as sementes e as malaguetas .
Acrescentar à argamassa e esmagar bem.
Cortar a galanga e lavar bem a combava.
Engrossar a combava e adicionar a casca à argamassa. Adicionar uma colher cheia de galanga picada.
Cortar a chalota e adicionar a quantidade desejada à argamassa.
Fazer o mesmo com o alho.
Mash bem a uma pasta suave.
Colocar o óleo num wok ou numa frigideira alta. Aquecer com calor moderado e adicionar duas ou três colheres de sopa de pasta de caril vermelho.
Cozinhe a massa até que tenha absorvido todo o óleo! Acrescentar gradualmente, enquanto se mexe, metade do leite de coco.
Entretanto, cortar a carne escolhida (neste caso carne de porco) em fatias e depois em pedaços.
Acrescentar a carne ao caril quente. Ferva em lume brando.
Preparar o ananás fresco.
Remover a casca, a secção central e cortar em 8 partes e depois em pequenas fatias.
Acrescentar o ananás.
Durante a cozedura, adicionar as folhas de kaffir lavadas, o açúcar de palma e o molho de peixe. Adicionar o resto do leite de coco até que o picante seja palatável. Ajustar o tempero em molho de peixe.
O conselho de Bernard: Os caris tailandeses não assumem todos os seus sabores com açúcar e molho de peixe. É um pouco como o sal e a pimenta de caril. É portanto necessário provar e rectificar com estes dois elementos!
Acrescentar as folhas de manjericão tailandesas.
Cozinhar até ficar cremoso. De facto, apesar da presença de leite de coco de “cozinha especial”, que é mais cremoso que o leite de coco líquido (para o tom kah gai), a adição de ananás, que torna o seu sumo no caril, acrescenta a sua parte de líquido. Deve portanto ser deixado a cozinhar, por um lado para o tornar cremoso e por outro para amaciar a carne de porco, que é dura no início da cozedura e mais tenra quando cozinhada durante mais tempo.
