El otro día tenía un mango que no estaba muy bueno, y al final hice un chutney con él, un poco al azar. Delicioso con muchas cosas: arroz, foie gras, pollo, etc. Esta vez lo he vuelto a hacer con un mango mejor y he ajustado las proporciones para conseguir un chutney que me encanta. ¡Podría comerlo tal como está con una cuchara! Para el chutney:
400 g de pulpa de mango
150 g de azúcar en polvo
1/2 cucharadita de sal
pimienta negra
75 ml de vinagre blanco
2 pimientos de ave
1cm de jengibre fresco rallado
Pelar y cortar el mango en trozos.
Poner los trozos en una sartén con el azúcar, la sal y el vinagre.
Picar finamente los chiles rojos. Puedes poner sólo la mitad de las semillas. Lo pongo todo, ¡porque me encanta el picante! Añade también pimienta negra recién molida al gusto.
Rallar el jengibre.
Mezclar bien y cocinar durante unos 20 minutos a fuego moderado.
Pasado este tiempo, mezclar un poco con una batidora de mano.
Todavía debería quedar algo de textura.
Cocer durante otros 10-15 minutos. El chutney debe tener una textura agradable, como una mermelada.
Conservar en un lugar fresco o en un tarro de mermelada esterilizado.
