No outro dia tive uma manga que não era muito boa, e finalmente fiz um chutney com ela, de forma um pouco aleatória. Delicioso com muitas coisas: arroz, foie gras, galinha, etc. Fi-lo novamente com uma manga melhor desta vez e ajustei as proporções para obter um chutney que eu adoro. Podia comê-lo com uma colher! Uma receita muito simples enquanto se espera pela pequena bomba calórica que chegará na próxima semana ao blogue…
Para o chutney:
400g de carne de manga
150g de açúcar pilão
1/2 colher de chá de sal
pimenta preta
75ml de vinagre branco
2 pimentos de aves
1cm de gengibre fresco ralado
Descascar e cortar a manga em pedaços.
Colocar as peças numa frigideira com o açúcar, sal e vinagre.
Cortar finamente as malaguetas vermelhas. Só se pode colocar metade das sementes. Coloquei tudo, porque adoro a especiaria! Acrescentar também pimenta preta moída na hora a gosto.
Rejuvenescer o gengibre.
Misturar bem e cozinhar durante cerca de 20 minutos em lume moderado.
Depois deste tempo, misturar um pouco o tempo com uma varinha mágica.
Ainda deve sobrar alguma textura.
Cozinhar por mais 10-15 minutos. O chutney deve ter uma textura agradável, como uma compota.
Armazenar num local fresco ou num frasco de compota esterilizado.
