Chutney de Mangue

L’autre jour, j’ai mangé une mangue qui n’était pas vraiment bonne, et j’en ai finalement fait un chutney, un peu au hasard. Délicieux avec plein de choses: du riz, du foie gras, du poulet etc. Je l’ai refait avec cette fois une meilleure mangue et en ajustant les proportions pour avoir un chutney que j’adore. Je pourrais le manger tel quel à la cuillère ! Une recette vraiment toute simple en attendant la petite bombe calorique qui arrivera la semaine prochaine sur le blog…

Épluchez et coupez la mangue en morceaux.
Mettez les morceaux dans une casserole avec le sucre, le sel et le vinaigre.
Hachez finement les piments rouges. Vous pouvez ne mettre que la moitié des graines. J’ai mis la totalité, car j’adore le piquant ! Ajoutez également du poivre noir du moulin à votre goût.
Râpez le gingembre.
Mélangez bien et faites cuire une vingtaine de minutes sur feu modéré.
Au bout de ce temps, mixez un peu le temps avec un mixeur plongeant.
Il doit quand même rester une certaine texture.
Faites cuire de nouveau 10 à 15 minutes de plus. Le chutney doit avoir une belle texture, comme une confiture.
Conservez-le au frais ou alors dans un pot à confiture stérilisé.

Delicious with lots of things: rice, foie gras, chicken etc. I made it again with a better mango this time and adjusted the proportions to have a chutney that I love. I could eat it as it is with a spoon! A really simple recipe while waiting for the little caloric bomb that will arrive next week on the blog…

For the chutney:

400g of mango flesh
150g of caster sugar
1/2 teaspoon of salt
black pepper
75ml white vinegar
2 bird peppers
1cm freshly grated ginger

Peel and cut the mango into pieces.

Put the pieces in a saucepan with the sugar, salt and vinegar.

Finely chop the red peppers. You can put only half of the seeds. I put the whole thing in, because I love the spice! Also add ground black pepper to taste.

Grate the ginger.

Mix well and cook for about 20 minutes over moderate heat.

After this time, mix a little with an immersion blender.

There should still be some texture left.

Cook for another 10 to 15 minutes. The chutney should have a nice texture, like a jam.

Store in a cool place or in a sterilized jam jar.
