Una pieza imprescindible de nuestra infancia. En cuanto sale del horno, ¡es realmente difícil no lanzarse a por él! Sobre todo, hay que comerlos enteros y sentir el crujido del azúcar bajo los dientes. Cuando preparo esta receta para mis sobrinos, los pobres chouquettes no suelen sobrevivir mucho tiempo…
Receta de «chouquettes» para cien piezas:
-125ml de agua
-125ml de leche
-250ml de huevos (¡necesitas un volumen para que la pasta choux salga bien! son unos 5 huevos)
-140g de harina
-110g de mantequilla
-5g de azúcar
-5g de sal
-azúcar de grano (o azúcar perlado, según la denominación)
Precalentar el horno a 200°C.
Poner en un cazo la leche, el agua, la mantequilla, el azúcar y la sal.
Llevar a ebullición a fuego lento.
Añadir la harina de una vez fuera del fuego.
Remover bien (¡incluso con bastante brío!) y volver a poner a fuego lento durante 1 minuto para que se seque la masa. Hay que seguir mezclando. La masa se desprenderá del fondo de la sartén.
Verter la masa en un bol.
Añadir los 205 ml de huevos batidos poco a poco a la masa. mezclar bien antes de añadir el resto de los huevos.
Remover enérgicamente para combinar.
Pasar a una manga pastelera provista de una punta plana de 8 mm.
En una bandeja de horno forrada con papel de hornear, haz pequeños montones (no importa si son regulares) del mismo tamaño que los macarrones. Es una buena manera de practicar con la manga pastelera.
Espolvorear la parte superior de cada chouquette con azúcar granulado.
A continuación, haga movimientos circulares con el plato para pegar el azúcar contra las chouquettes…
Hornear a 200°C durante 15 minutos, vigilando la cocción. No todos los hornos son iguales.
