A must-have for all of us as a child! As soon as it comes out of the oven, it’s really hard not to throw yourself into it! You should eat them whole and feel the sugar crackle under your teeth. When I prepare this recipe for my nephews, the poor chouquettes don’t usually survive very long…
Recipe for “chouquettes” for a hundred pieces:
-125ml of water
-125ml of milk
-250ml of eggs (you need a volume for the choux pastry to succeed! that’s about 5 eggs)
-140g of flour
-110g of butter
-5g of sugar
-5g of salt
-grain sugar (or pearl sugar depending on the appellation)
Preheat oven to 200°C.
Put milk, water, butter, sugar and salt in a saucepan.
Bring to a boil over low heat.
Add the flour all at once off the heat.
Stir well (even quite briskly!!) then put back on low heat for 1 minute to dry out the dough. It is necessary to mix constantly. The dough will come off the bottom of the pan.
Pour the dough into a bowl.
Add the 205ml of beaten eggs little by little on the dough. mix well before adding the remaining eggs.
Stir vigorously to blend.
Transfer to a pastry bag fitted with an 8mm plain tip.
On a baking sheet lined with parchment paper, make small piles (it doesn’t matter if they are regular) the same size as the macaroons. It’s a great way to practice with a piping bag!
Sprinkle granulated sugar on top of each puff pastry.
Then make circular movements with the plate to stick the sugar against the chouquettes…
Bake at 200°C for 15 minutes, keeping an eye on the cooking process. Not all ovens are the same!
