وصفة لـ “chouquettes” لمائة قطعة:
– 125 مل ماء
– 125 مل حليب
-250 مل من البيض (تحتاج إلى حجم لكي تنجح عجينة choux! أي حوالي 5 بيضات)
– 140 جرام دقيق
– 110 جرام زبدة
– 5 جرام سكر
– 5 جرام ملح
– سكر الحبوب (أو سكر اللؤلؤ حسب الاسم)
سخني الفرن إلى 200 درجة مئوية.
ضعي الحليب والماء والزبدة والسكر والملح في قدر.
يُغلى المزيج على نار خفيفة.
نضيف الدقيق كله مرة واحدة على النار.
تخلط جيدا (حتى بقوة!) ثم العودة إلى درجة حرارة منخفضة لمدة دقيقة واحدة لتجفيف العجين. عليك أن تخلط باستمرار. ستنسحب العجينة بعيدًا عن قاع المقلاة.
صب الخليط في وعاء.
أضيفي 205 مل من البيض المخفوق شيئًا فشيئًا على العجينة. اخلطي جيداً قبل إضافة باقي البيض.
تخلط بقوة لتجانس كل شيء.
انقله إلى كيس مواسير مزود بفوهة عادية 8 مم.
على ورقة خبز مبطنة بورق زبدة ، اصنع أكوامًا صغيرة (مهما كانت عادية) بنفس حجم المعكرون. إنها طريقة رائعة لممارسة حقيبة الأنابيب !!
يرش الجزء العلوي من كل شوكيت بسكر الحبوب.
ثم قم بحركات دائرية بالصحن لإلصاق السكر بالعناقيد …
اطبخي على حرارة 200 درجة مئوية لمدة 15 دقيقة ، مع مشاهدة الطهي طوال الوقت. ليست كل الأفران متشابهة !!
