El chile encurtido es un chile bastante grande y no tan fuerte como el fresco. Receta de uno de mis cursos en Pekín.
Receta de «cerdo con chile en escabeche» para 4 personas:
-500g de lomo de cerdo cortado en tiras
-300g de zanahorias, cortadas en juliana fina
-4 cucharaditas de jengibre finamente picado
-8 cucharaditas de ajo finamente picado (unos 10-11 dientes)
-4 cebollinos chinos finamente picados
-6 u 8 chiles encurtidos, sin semillas, picados finamente
Marinado:
-4 cucharaditas de salsa de soja clara
-4 cucharaditas de vino chino (de la cocina)
-8 cucharaditas de harina de maíz
Salsa:
-1/2 cucharadita de sal
-4 cucharaditas de salsa de soja clara
-8 cucharaditas de azúcar
-6 cucharaditas de vinagre chino (o de jerez)
-4 cucharaditas de vino chino
-2 cucharaditas de harina de maíz
-6 cucharadas de agua
Preparar la marinada mezclando los ingredientes, la salsa de soja clara, el vino de cocina chino y la harina de maíz.
Verter sobre la carne de cerdo cortada en tiras. Si es necesario, añada un poco de agua si la marinada está demasiado espesa. Dejar marinar durante al menos 15 minutos.
Prepare la salsa. Mezclar todos los ingredientes en un bol. Haz una reserva.
Prepare el resto de las verduras y los condimentos. Picar las zanahorias peladas en juliana, picar la guindilla (¡sin las semillas!), el ajo, el jengibre y el cebollino.
Calentar el wok a fuego alto. Añadir 2 cucharadas de aceite. Cocinar las zanahorias durante aproximadamente 1 minuto con 1/2 cucharadita de sal, removiendo constantemente. Retirar las zanahorias y reservarlas.
Vuelva a poner el wok vacío a fuego alto y añada 3 cucharadas de aceite. Añade la carne de cerdo. Separe todos los trozos y dórelos por todos los lados.
Añadir las guindillas picadas, cocinar unos segundos, añadiendo un poco de aceite si es necesario (¡la cocina china es grasienta!). A continuación, añadir el jengibre y el ajo y cocinar durante 30-60 segundos. Cocinar al wok es muy rápido.
Añadir las zanahorias precocidas, sin dejar de remover.
A continuación, añadir la salsa y cocinar hasta que espese. Sírvelo inmediatamente.
