A malagueta picada é uma malagueta bastante grande e não tão forte como a malagueta fresca. Receita de um dos meus cursos em Pequim!
Receita de “carne de porco com chili marinado” para 4 pessoas:
-500g de lombinho de porco cortado em tiras
-300g de cenouras, finamente julienizadas
-4 colheres de chá de gengibre finamente picado
-8 colheres de chá de alho finamente picado (cerca de 10-11 dentes)
-4 cebolinho chinês finamente cortado
-6 ou 8 pimentas em conserva, sementes retiradas, finamente picadas
Marinada:
-4 colheres de chá de molho de soja transparente
-4 colheres de chá de vinho chinês (da cozinha)
-8 colheres de chá de farinha de milho
Molho:
-1/2 colher de chá de sal
-4 colheres de chá de molho de soja transparente
-8 colheres de chá de açúcar
-6 colheres de chá de vinagre chinês (ou xerez)
-4 colheres de chá de vinho chinês
-2 colheres de chá de farinha de milho
-6 colheres de sopa de água
Preparar a marinada, misturando os ingredientes, molho de soja transparente, vinho de cozinha chinês e farinha de milho.
Verter sobre a carne de porco cortada em tiras. Se necessário, adicionar um pouco de água se a marinada for demasiado espessa. Deixar a marinar durante pelo menos 15 minutos.
Preparar o molho. Misturar todos os ingredientes numa tigela. Fazer uma reserva.
Preparar o resto dos legumes e condimentos. Cortar as cenouras descascadas em tiras de juliana, cortar a malagueta (sem as sementes!!), alho, gengibre e cebolinho.
Aqueça o wok em lume forte. Adicionar 2 colheres de sopa de óleo. Cozer as cenouras durante cerca de 1 minuto com 1/2 colher de chá de sal, mexendo constantemente. Retirar as cenouras e pô-las de lado.
Devolver o wok vazio ao calor elevado e adicionar 3 colheres de sopa de óleo. Acrescentar a carne de porco. Separar todas as peças e dourá-las em todos os lados.
Adicionar as malaguetas picadas, cozinhar durante alguns segundos, adicionar um pouco de óleo se necessário (a cozinha chinesa é gordurosa!). Depois adicionar o gengibre e o alho e cozinhar durante 30-60 segundos. A cozedura do Wok é muito rápida!
Adicione as cenouras pré-cozinhadas, ainda a mexer!
Depois adicionar o molho e cozinhar até engrossar. Servir imediatamente!
