La receta de los canelés es una de las primeras que publiqué en mi blog de cocina en enero de 2010. Ya casi 9 años… Puedes verlos AQUÍ. Lo he dicho siempre y lo mantengo: ¡se necesitan moldes de cobre de verdad para hacerlos! En cualquier caso para obtener un resultado bueno y nítido. Así que hoy voy a publicar una versión de chocolate. Hace tiempo que hago mi propio chocolate y quería probarlo en una receta. Pensé que haría la masa más pesada, pero en realidad es lo contrario: la masa parece casi más ligera. La consistencia es increíble. A todos los que me rodeaban les encantaban estos canelés de chocolate.
Receta para una docena de canelés :
500 g de leche entera (o incluso leche cruda)
65 g de mantequilla semisalada
65g de ron ámbar
210 g de chocolate
210g de azúcar
170 g de huevo entero
2 yemas de huevo grandes
100 g de harina
Vierta la leche en un cazo con el ron, el chocolate y la mantequilla semisalada. Calentar sin hervir a fuego lento, justo hasta que la mantequilla y el chocolate se hayan derretido.
Mientras tanto, poner los 170g de huevo y las 2 yemas en un bol con el azúcar. Mezclar con un batidor sin insistir.
Añadir la harina y mezclar de nuevo.
A continuación, verter el contenido de la sartén lentamente mientras se remueve.
Verter en un recipiente. Dejar enfriar a temperatura ambiente. Cubrir con film transparente y enfriar toda la noche.
Al día siguiente, sacar el recipiente al menos 3 horas antes de hacer los canelés. Mezclar una última vez suavemente.
Engrasar los moldes de cobre con deslizador (ver AQUÍ) o con spray desmoldante (ver explicación AQUÍ).
Caliente su horno a 275°C y si el máximo es 250°C, al menos hasta esa temperatura.
Cuando el horno esté caliente, hornear durante 10 minutos a 275°C o 13 minutos a 250°C. A continuación, baje el horno a 180°C y hornee durante otros 35 minutos.
Sacar con cuidado cuando todavía está caliente.
Dejar enfriar de 1 a 1,5 horas más. Entonces serán absolutamente irresistibles: todavía crujientes por fuera y suaves por dentro…
