A receita para os canelés é uma das primeiras que publiquei no meu blogue de culinária em Janeiro de 2010. Já há quase 9 anos… Pode vê-los AQUI. Eu sempre o disse e mantenho-o: são necessários moldes de cobre verdadeiros para os fazer! Em qualquer caso, para obter um resultado bom e estaladiço. Por isso, hoje estou a publicar uma versão em chocolate. Já há algum tempo que estou a fazer o meu próprio chocolate e queria experimentá-lo numa receita. Pensei que iria tornar a massa mais pesada, mas de facto o oposto é verdade: a massa parece quase mais leve. A consistência é incrível. Todos à minha volta adoravam estes canelés de chocolate.
Receita para uma dúzia de canelés :
500g de leite inteiro (ou mesmo leite cru)
65g de manteiga semi-salgada
65g de rum âmbar
210g de chocolate
210g de açúcar
170g de ovo inteiro
2 gemas de ovo grandes
100g de farinha
Verter o leite numa caçarola com rum, chocolate e manteiga semi-salgada. Aquecer sem ferver em lume brando, apenas até que a manteiga e o chocolate tenham derretido.
Entretanto, colocar os 170g de ovo e as 2 gemas numa tigela com o açúcar. Misturar com um batedor sem insistir.
Acrescentar a farinha e misturar novamente.
Depois verter lentamente o conteúdo da frigideira enquanto se mexe.
Verter para dentro de um recipiente. Deixar arrefecer até à temperatura ambiente. Cobrir com película aderente e arrefecer durante a noite.
No dia seguinte, retirar o recipiente pelo menos 3 horas antes de fazer os canelés. Misturar uma última vez suavemente.
Lubrificar os moldes de cobre com o slider (ver AQUI) ou pulverizador de libertação (ver explicação AQUI).
Aqueça o seu forno a 275°C e se o máximo for 250°C, pelo menos a essa temperatura.
Quando o forno estiver quente, cozer durante 10 minutos a 275°C ou 13 minutos a 250°C. Depois baixar o forno a 180°C e cozer durante mais 35 minutos.
Apareça cuidadosamente quando ainda está quente.
Deixar arrefecer por mais 1 a 1,5 horas. Nessa altura serão absolutamente irresistíveis: ainda estaladiços por fora e macios por dentro…
