Esta es una receta italiana, muy muy sencilla de hacer. Literalmente «brutti ma buoni», significa «feo pero bueno». Y este es realmente el caso. Pero finalmente encuentro una estética en esta forma cruda, casi mineral. Aquí hay tres ingredientes: azúcar, avellanas y claras de huevo. ¿La textura? Crujiente por encima y suave por dentro. Para disfrutar con un espresso fuerte.
Receta de «brutti ma buoni»:
-100 g de clara de huevo (aproximadamente 3 claras de huevo medianas)
-200g de azúcar
-150g de avellana en polvo
-150 g de avellanas picadas
Comience batiendo las claras de huevo a punto de nieve.
Cuando las claras empiecen a subir, añadir poco a poco el azúcar glas. Seguir batiendo hasta que el azúcar se haya incorporado por completo. El resultado es una especie de merengue suave.
Mezclar las avellanas picadas y pulverizadas.
A continuación, vierta en el merengue.
Mezclar, levantando la mezcla para evitar que las claras se desprendan.
Poner la masa en un cazo a fuego lento o medio.
Sin dejar de remover constantemente con una cuchara, cocine de diez a quince minutos.
A continuación, la masa comienza a despegarse.
Y acaba por no pegarse a la sartén (bueno, casi, ¡porque sigue siendo azúcar!).
Con dos cucharadas, forme montones de masa en una bandeja de horno forrada con papel de hornear en .
