Aqui está uma receita italiana, muito simples de fazer. Literalmente “brutti ma buoni”, significa “feio mas bom”! E este é realmente o caso. Mas finalmente encontro uma estética nesta forma bruta, quase mineral. Existem aqui três ingredientes: açúcar, avelãs e claras de ovo. A textura? Crocante no topo e macio no interior. Para ser apreciado com um café expresso forte!
Receita para “brutti ma buoni”:
-100g de clara de ovo (cerca de 3 claras de ovo médias)
-200g de açúcar
-150g de pó de avelã
-150g de avelãs picadas
Comece por bater as claras de ovo até estas ficarem duras.
Quando os brancos começam a subir, adicionar gradualmente o açúcar de rícino. Continuar a bater até que o açúcar esteja totalmente incorporado. O resultado é uma espécie de merengue suave.
Misturar as avelãs picadas e em pó.
Depois deitar no merengue.
Misturar, levantando a mistura para evitar que os brancos caiam.
Colocar a massa numa caçarola em lume brando a médio.
Enquanto mexe constantemente com uma colher, cozinhe durante dez a quinze minutos.
A massa começa então a descascar.
E acaba por não se colar à panela (bem, quase, porque ainda é açúcar!).
Utilizando duas colheres de sopa, formar pilhas de massa numa folha de cozedura forrada com papel vegetal em .
Cozer a 180°C durante 15 a 20 minutos.
Em seguida, deixar arrefecer num suporte de arame.
Os “brutti ma buoni” estão bem dourados: crocante no topo e um pouco macio no interior!
