Acabo de volver de Islandia y estuve desayunando unas barritas de avena bastante parecidas. Hice la receta como siempre por instinto, poniendo los ingredientes de forma un poco desordenada (bueno, sigo sabiendo lo que hay que hacer y lo que no) y funciona muy bien. Se trata de algo intermedio entre la masa de galletas y los flapjacks (¡la receta de los flapjacks está AQUÍ!). El resultado es un delicioso desayuno o merienda. Es rico, es de chocolate, es reconfortante, ¡todo lo que me gusta!
Receta para un molde cuadrado de 22 cm:
250g de avena
130 g de harina
150g de azúcar moreno
145 g de mantequilla semisalada
1 huevo de 50g
1 cucharadita de licor de vainilla
170 g de chocolate con leche
Licuar un poco la avena. No los muela demasiado fino.
Un polvo grueso es más que suficiente.
Ponga los copos de avena, el azúcar moreno, la harina, la vainilla líquida y la mantequilla semisalada en el bol de su robot de cocina o en un bol.
Mezclar con la hoja o a mano para cubrir los copos de mantequilla. Añade el huevo.
Mezclar de nuevo para combinar la masa.
Verter los trozos de chocolate con leche.
Vuelve a mezclar.
Verter la masa en el molde forrado con papel de hornear.
Extiéndalo uniformemente en la sartén.
Hornear a 170°C durante 30 minutos.
Dejar enfriar y cortar el pastel en trozos.
Se pueden conservar durante 3-4 días en una caja hermética.
