Hace tiempo descubrí estos magníficos higos secos Baglama rellenos de hígado en la región del Périgord. Tenía muchas ganas de volver a hacerlos para mí, pero también para el blog y compartir la receta con vosotros. ¡Ya está hecho y es una auténtica delicia! Es muy fácil de hacer y, obviamente, el resultado será aún mejor con foie gras casero.
Para 4 personas :
8 higos secos baglama número 1
250 g de foie gras semicocido casero (receta AQUÍ o AQUÍ)
Aquí están los higos Baglama n°1 que compro en G Detou, pero puede encontrar higos Baglama en tiendas de comestibles orientales o en Internet.
Se atan con rafia.
Cortar el foie gras en porciones de 30 g cada una.
Envolver cada porción en film transparente y formar una pequeña esfera.
Reservar en un lugar fresco hasta que el foie gras adquiera una consistencia firme.
Separar los higos cortando la rafia, pero dejando un trozo en las colas de los higos. Cocer al vapor durante 3 minutos.
Cortar el higo por la parte inferior y preparar el interior pelando la pared de la pulpa.
Introducir el foie gras sin el film transparente y cerrar bien el higo alrededor.
Envolver cada higo relleno en film transparente.
Dejar enfriar hasta el momento de servir, idealmente toda la noche.
Disfrútelo con pan tostado.

Voici un moment que j'avais découvert ces magnifiques figues séchées Baglama fourrées au foie dans le Périgord. J'avais très envie de les refaire pour moi-même, mais aussi pour le blog et partager la recette avec vous. C'est chose faite et c'est un véritable délice ! C'est assez facile à faire et le résultat sera évidemment encore meilleur avec du foie gras maison !
