Descobri estes magníficos figos Baglama secos cheios de fígado na região do Périgord há algum tempo. Queria mesmo fazê-los novamente para mim, mas também para o blogue e partilhar a receita convosco. Está feito e é um verdadeiro deleite! É bastante fácil de fazer e o resultado será obviamente ainda melhor com foie gras caseiro!
Para 4 pessoas:
8 figos secos de baglama número 1
250g de foie gras semi-cozido caseiro (receita AQUI ou AQUI)
Aqui estão os figos Baglama n°1 que compro na G Detou, mas pode encontrar figos Baglama em mercearias orientais ou na Internet.
São amarrados juntamente com ráfia.
Cortar o foie gras em porções de 30g cada.
Envolver cada porção em película aderente e rolar para uma pequena esfera.
Colocar de lado num local fresco até que o foie gras tenha alcançado uma consistência firme.
Separar os figos cortando a rafia, mas deixando um pedaço nas caudas dos figos. Vapor durante 3 minutos.
Cortar o figo do fundo e preparar o interior, descascando a parede da carne.
Inserir o foie gras sem a película aderente e fechar bem o figo à sua volta.
Envolver cada figo empalhado em película aderente.
Arrefecer até estar pronto a servir, de preferência de um dia para o outro!
Desfrute com pão tostado.

Voici un moment que j'avais découvert ces magnifiques figues séchées Baglama fourrées au foie dans le Périgord. J'avais très envie de les refaire pour moi-même, mais aussi pour le blog et partager la recette avec vous. C'est chose faite et c'est un véritable délice ! C'est assez facile à faire et le résultat sera évidemment encore meilleur avec du foie gras maison !
