Esta receta tiene muchos nombres diferentes. El Baba Ganoush, moutabal, mtabal… Pero el resultado es el mismo y siempre delicioso cuando es «casero». Para los que aún no lo saben, se trata de un caviar de berenjena con crema de sésamo (tahina), aderezado con aceite de oliva, ajo y zumo de limón. Este plato se encuentra en la cuenca mediterránea , en el Líbano, en Egipto… ¡Una pequeña maravilla, especialmente con trozos de pan mojados en ella!
Receta de babaganoush:
-3 berenjenas
-el zumo de dos o tres limones pequeños
-2 dientes de ajo
-4 a 5 cucharadas de aceite de oliva
-4 cucharadas de crema de sésamo (tehina)
-sel
Empezar por poner las berenjenas en el horno. Basta con colocarlos en una bandeja de horno, con papel de aluminio para proteger la fuente.
Poner el horno en «grill» y asar la berenjena, dándole la vuelta de vez en cuando. La piel se freirá e incluso se quemará, pero esto es bastante normal. La berenjena debe estar blanda por dentro. El tiempo de cocción depende tanto del horno, que no sé cuánto puede tardar. Hay que vigilar.
Dejar enfriar completamente antes de manipularlo. Retirar la pulpa de la berenjena y colocarla en un recipiente.
Con una cuchara, convertir la pulpa en un puré.
Añadir el aceite de oliva.
Sal y crema de sésamo (tehina, tahini, tahini…).
Exprimir los limones y verter sobre la marcha para probar y ajustar.
Triturar los dos dientes de ajo, añadirlos y mezclar bien.
Colocar el babaganoush en un bol y rociar con aceite de oliva. Deje reposar en un lugar fresco antes de servir, pero este plato es igual de delicioso servido caliente.
¡Sumergir en el babaganoush, trozos de pan de pita tostado!
