Esta receita tem muitos nomes diferentes. O Baba Ganoush, moutabal, mtabal… Mas o resultado é o mesmo e sempre delicioso quando é “feito em casa”. Para aqueles que ainda não sabem, é um caviar de beringela com creme de sésamo (tahina), temperado com azeite, alho e sumo de limão. Este prato é encontrado na bacia do Mediterrâneo , no Líbano, no Egipto… Uma pequena maravilha, especialmente com pedaços de pão mergulhados nele!
Receita para babaganoush:
-3 beringelas
-o sumo de dois ou três pequenos limões
-2 dentes de alho
-4 a 5 colheres de sopa de azeite
-4 colheres de sopa de creme de sésamo (tehina)
-sel
Comece por colocar as beringelas no forno. Basta colocá-los sobre um tabuleiro, com folha de alumínio para proteger o prato.
Virar o forno para “grelhar” e assar a beringela, girando-a de vez em quando. A pele vai fritar e até queimar, mas isto é bastante normal. A beringela deve ser macia por dentro. O tempo de cozedura depende tanto do forno, que não sei quanto tempo pode demorar. É necessário monitorizar.
Deixar arrefecer completamente antes de manuseamento. Retirar a carne da beringela e colocá-la num recipiente.
Colher a carne para um puré.
Acrescentar o azeite de oliva.
Sal e creme de gergelim (tehina, tahini, tahin…).
Aperte os limões e verta à medida que vai provando e ajustando.
Esmagar os dois dentes de alho, adicioná-los e misturá-los bem.
Coloque o babaganoush numa tigela e regue com azeite. Deixe-se estar num lugar fresco antes de servir, mas este prato é igualmente delicioso servido quente.
Mergulhe no babaganoush, pedaços de pão pita tostado!
