Esta versión es rápida de preparar y hace un arroz con leche cremoso, que hará las delicias de todos los aficionados al arroz con leche casero, ¡como yo! Esta receta la tengo desde que era adolescente (¡hace tiempo!) y me encanta porque no es demasiado dulce y el arroz es cremoso.
Receta de arroz con leche en sartén:
-750ml de leche entera fresca (incluso cruda si es posible)
-200g de arroz especial para postres
-1 vaina de vainilla
-90g de azúcar
Lavar el arroz en abundante agua, colocándolo en un colador fino para que no se escapen los granos.
Cocer el arroz en agua hirviendo durante 5 minutos.
Escurrir el arroz y devolverlo a la sartén con la leche.
El consejo de Bernard: cuando he escurrido el arroz y lo he vuelto a poner en la olla con la leche, lo dejo reposar y me voy a hacer otra cosa… ¡De esta manera, el arroz empieza a hincharse en la leche y cuando por fin me decido a cocinarlo, tarda mucho menos y tengo menos que vigilar con una cuchara de madera…!
Añadir la vaina de vainilla, partida por la mitad y raspada, con la vainillina escurrida en la leche.
Dejar cocer a fuego lento, removiendo regularmente.
Cuando la leche se haya absorbido casi por completo, añadir el azúcar.
Cocer durante otros 5 minutos hasta que el arroz con leche haya alcanzado la consistencia deseada.
Sírvelo caliente o frío con mermelada o jalea de frutas.
Si el arroz se vuelve demasiado firme durante la noche, no dudes en verter leche sobre él para que vuelva a estar cremoso.
