Pero, ¿qué es una «Arlette»? Pues bien, es una especie de tuile fino, crujiente y caramelizado hecho con hojaldre (en este caso casero) y azúcar glas y ¡ya está! El resultado es increíblemente ligero y sabroso y es un acompañamiento perfecto para helados y sorbetes. Extremadamente sencillas de hacer, las «arlettes» son similares a las palmeras, pero mucho más finas y caramelizadas. Una de mis recetas favoritas por su sencillez y resultado.
Receta de arlettes:
Hojaldre casero (haga clic en el nombre para ir directamente a la receta). También se puede utilizar hojaldre de calidad industrial que no esté enrollado.

Las instrucciones
Enharinar ligeramente la superficie de trabajo, pero no demasiado. Colocar un trozo de hojaldre en un cuadrado.
Extienda la masa de forma fina. Si no está todo recto, no importa.
Enrollarlo en forma de salchicha.
A continuación, cortar la masa en trozos. Cuanto más grandes sean las piezas, más grandes serán los arlettes.
Poner un montón de azúcar glas en la superficie de trabajo.
Pasar los trozos de masa por azúcar glas por ambos lados.
A continuación, pasar un rodillo fino por el azúcar glas. La masa absorberá el azúcar que le convenga.
¡Puedes ver la diferencia de tamaño entre las piezas pequeñas y el tamaño del arlette! Si quieres arlettes pequeñas, tienes que cortar el hojaldre más finamente.
Colocar las arlettes en una bandeja de horno forrada con papel de hornear. Se pueden apretar porque la masa se encogerá en lugar de extenderse .
Hornee de 8 a 1 minuto, dependiendo de la potencia de su horno. Observa la primera vez y luego aplica el tiempo correcto a las otras placas.
Debe guardarse en una caja hermética. De lo contrario, las arlettes perderán su textura crujiente.
